Hemp Oatmeal with Strawberry Puree & Pistachios

You can sprinkle these protein packed morsels on anything from soup to salad to oatmeal. This recipe serves six, so if you only want to make one bowl, just prepare a bowl of oatmeal according to package directions and add 3T. of hemp hearts. You’ll want to make the full batch of strawberry puree because it will last for about 5 days in the fridge and you’ll want to pour it on everything, because it’s super yummy. You can also use raspberries, blueberries or any berry at all.

You can add any additional ingredients, such as green onion, or chili oil, but it’s a great basic recipe to build upon. It will taste salty on it’s own, but once you add to the veggies and brown rice, it will be fine since we’re not adding salt to either of those items. If you’re new to tofu, this brand will make you a believer. Make sure you get the “cutlets” because they are prepared in a way that gives them a great texture.

Cream of Cauliflower Soup with Fresh Thyme

This is a comfort food that was inspired by a decadent soup I had on a cruise ship. I replaced the butter and cream with 1 T. of olive oil and 1/2 cup of macadamia nuts. The recipe still tastes delicious but the cholesterol has jumped overboard and is nowhere to be found.

This is a true comfort food you can cozy up with on a cold night or any time you want to feel pampered. It has the richness of creamy mashed potatoes without the guilt. Even if you don’t like cauliflower, you’ll never know it’s in here because it’s been blended to oblivion. All you’ll taste is creamy goodness.

Garbanzo & Brown Rice Burgers

Sometimes nothing else gives you the satisfaction of biting into a big hunk of bread served with a savory slab of protein and all the timmin’s. The garbanzo burger with give you that satisfied feeling without the fat, cholesterol, hormones and antibiotics you’ve come to love in your traditional drive-through burger. I’ve replaced all of those nasty things with nutrients and flavor and I think you’ll like it. When you think about it, what do we usually add to traditional beef burgers to make them taste great – vegetables right? Onion, tomato, pickles, lettuce. So, why not just make the whole thing out of veggies and call it a day? You’re catching on quickly…

Brown Rice & Lentil Stuffed Red Pepper Salad

I like my salads to be hearty and filling with a light and bright flavor. That’s exactly what happens when you mix in protein rich lentils and brown rice, lots of fresh colorful veggies and the dressing made with Apple Cider Vinegar (a great weight loss ingredient, folks) and agave nectar (it’s like honey without the bee slavery). This is a refreshing salad that will make you feel energized but not stuffed. Enjoy the beautiful colors because they’re giving you a healthy dose of antioxidants.
